Our fresh WET pasta that is bought refrigerated is best when used within 3-5 days of purchase. Our DRIED pasta is best when used within a month of purchase, but keep in mind some shapes are susceptible to breaking. Our FROZEN handcrafted pasta is good for one month and must be cooked from frozen to avoid sticking.
The Italian Apron GLUTEN-FREE pasta is egg based and does require refrigeration and is best when used within 3-5 days, or can be frozen up to one month.
Our pasta can be stored FROZEN for up to 1month - just be sure to keep frozen until it's time to cook.
AL DENTE or not to be..."al dente" is pasta with a bite of firmness and is most authentic to Italy,
but really it is a matter of preference for you!
PASTA COOK TIMES are given in a range. Example, 8-10 minutes. So if you like pasta al dente, cook closer to the 8 minute time frame. Otherwise, cook it longer. ALWAYS taste your pasta to your liking...don't rely on cook time!
SALT YOUR WATER and remember 1:1:4...for ONE pound of pasta, use ONE heaping tablespoon of Kosher SALT in 4 Quarts of water. It makes a huge impact in flavor! Adjust it to your liking, but do it once and you'll never forget it again.
